Honestly, who doesn’t love pancakes? These take minimal ingredients that you probably have at home right now, so give these a shot, you can't mess them up!
Especially if you have kids, they will love them.
The freshly squeezed lemon juice & blueberry flavors together are such a good combo.
Drizzle them with some honey or maple syrup & you have the perfect meal.
Ingredients you will need:
2 bananas, mashed
1 cup blueberries
1 cup oat flour *you can make your own by placing whole oats in a food processor or blender until flour consistency
1/2 cup oat milk or water
juice from 1 lemon
1 tsp vanilla extract
Recommended toppings:
maple syrup
honey
Directions:
1. Mash 2 bananas in a large bowl, once mashed add in the oat flour, plant-based milk or water, lemon juice & vanilla extract. Stir together until well combined. Then, fold in the blueberries.
2. Melt coconut oil or olive oil on a large to medium-sized stovetop pan. Place on medium-high heat. Once hot, place batter & cook for 4-5 minutes on each side.
3. Repeat the process above until all batter is gone. It should make about 6-8 pancakes.
