The color of this hummus is un-beet-able! I mean seriously look at that beautiful shade of pink. This dip can dress up any dish. It is quick, easy, delicious & aesthetically pleasing - all the things!
I don't know if it is just me, but I have an obsession with beets. Now, this definitely wasn't a staple in my diet growing but, I LOVE them now. I typically add them on sandwiches, slice them up and top on my salads or just eat them plain. They add a nice, sweet flavor to almost anything.
Like all hummus, you can use this as a salad dressing or as a dip for cut up vegetables, pita bread or whatever you like!
Ingredients you will need:
1 can garbanzo beans
2 cups beets - I use the brand ‘Love Beets’ — mild vinegar
2 tbsp tahini
3 gloves of garlic or 1 tsp garlic powder
1/2 tsp cumin
1/4 tsp salt
2-4 tbsp water
Directions:
1. Place all ingredients in a food processor & blend on high until a creamy consistency.
2. Remove and serve.
Enjoy!
